Lemon Garlic Cod

This cod recipe has minimal ingredients, but the flavor is bold. The cod is dredged in seasoned cassava flour and seared in ghee. The sauce consists of lemon juice, garlic, and ghee. The fish and sauce are placed in the oven to continue cooking. Cod has a very mild flavor and doesn’t taste fishy. Everyone in my household devoured this dish.

Lemon Garlic Cod

This cod is rich, buttery, and loaded with garlic. It's also Whole30 and Paleo and will make even the pickiest of eaters happy.

Ingredients
  • 2 lbs. cod, cut into 6oz pieces
  • 1/2 C cassava  flour
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1 tsp cumin
  • 1/2 tsp ground coriander
  • 5 T lemon juice
  • 1/4 C ghee + 4 T ghee, melted
  • 6 garlic cloves, minced

Instructions
  1. Preheat the oven to 400 degrees.  In a small bowl whisk, the lemon juice and 1/4 cup melted ghee. In a separate small bowl whisk the cassava flour, salt, pepper, cumin, and coriander.
  2. Pat the cod dry and dredge in the lemon/ghee mixture and then the cassava flour mixture. Set the fish aside. Repeat this process until all the cod is coated. Keep the excess lemon/ghee mixture.
  3. In a large oven safe skillet on medium heat, add 4 tablespoons ghee. Once the pan is hot, sear both sides of the cod, about 2-3 minutes per side. Once the cod is seared, add the remaining lemon/ghee mixture and garlic. Place in the oven and bake for 10 minutes.
  4. The fish should be white and flaky when it is cooked through.
  5. Serve with your favorite vegetable side dish. Enjoy!
