Mediterranean Ground Beef Skillet

I am a big fan of one-pan meals that are easy and flavorful. This dish checks all those boxes and is easily modified to be Whole30 compatible by omitting the feta cheese. If you're on a Whole30, you can add some Kite Hill cream cheese or ricotta and still be compatible.

This dish has a smaller ingredient list, but don't let that fool you- it's delicious and has become a family favorite. Zucchini season is here; this is a great way to use some of the many zucchinis you have from your garden or neighbor's garden.

This one-pan meal is easy and flavorful. If you're doing a Whole30 or don't do well with dairy, just omit the feta cheese.

Ingredients
  • 1 T olive oil
  • 1 1/2 C zucchini, cut into 1/4 inch thick rounds and then quartered
  • 1/4 C sun-dried tomatoes, roughly chopped (packed in olive oil)
  • 2 C baby spinach
  • 5 garlic cloves, minced
  • 2 T yellow onion, small dice
  • 1 lb ground beef
  • 2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/2oz feta cheese, crumbled (omit on Whole30)
  • 1 T lemon juice
Instructions
  1. In a large skillet on medium heat, add the olive oil, garlic, and onion. Sauté for 1-2 minutes, stirring often to ensure the garlic doesn't burn.
  2. Add the beef to the skillet and break it into small pieces. Cook the beef until it's no longer pink and then add the oregano and sea salt. Stir everything to combine thoroughly.
  3. Add in the zucchini, sun-dried tomatoes, spinach, and lemon juice. Turn the heat to low and continue cooking, occasionally stirring, until the spinach is wilted and the zucchini is tender- about 5-7 minutes.
  4. Top the beef mixture with the crumbled feta cheese and serve.
