Oven-Roasted Yellow Squash

Yellow squash is a great summer vegetable because it is so versatile and turns out great cooked in various ways. I basted the sliced squash rounds with olive oil for this recipe and topped them with an almond flour/herbs and spices mixture. I then roasted them, and the outcome is such a delicious side dish that pairs perfectly with any main dish or grilled protein.

Oven-Roasted Yellow Squash

Yellow squash is a great side dish and can be prepared in a variety of ways. This version has an almond flour coating and is baked. It's Whole30 and Paleo compatible.

Ingredients
  • 2 medium yellow summer squash
  • 1 1/2 T olive oil
  • 1/4 C almond flour
  • 1/4 tsp dried basil
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 3/4 tsp sea salt
  • 1/8 tsp black pepper

Instructions
  1. Preheat the oven to 400 degrees. Slice the squash into 1/2-inch thick rounds and lay the rounds in a single layer on a sheet pan.
  2. In a small bowl, add the almond flour, basil, garlic powder, onion powder, sea salt, and pepper. Whisk the ingredients to combine thoroughly.
  3. Sprinkle the almond flour mixture over the squash, making sure each squash round has about the same amount of seasoning. Place the sheet pan in the oven and bake for 12-14 minutes. The squash should be tender when it is done.
  4. Place the squash under the broiler and broil for 2-3 minutes, or until the almond flour mixture is toasted.
  5. Serve as a side dish to any meal.
