Pineapple & Shrimp Cauliflower Rice

In my opinion, pineapple goes in and on everything. It just makes everything taste better. For this dish, the pineapple compliments the shrimp and other flavors of cauliflower rice. This is a one-pan meal that takes less than 30 minutes to complete, start to finish. It’s perfect for busy weeknight meals and makes amazing leftovers.

Pineapple & Shrimp Cauliflower Rice

This one pan, Paleo, and Whole30 dish is packed with flavor, vegetables, and shrimp. You can have dinner on the table in under 30 minutes.

Ingredients
  • 2-12oz bags frozen cauliflower rice
  • 1 small yellow onion, small dice
  • 4 green onions, thinly sliced
  • 2 C fresh pineapple, large dice
  • 1/2 C shredded carrots
  • 1/2 C coconut aminos
  • 1/2 tsp fish sauce
  • 1 tsp sesame oil
  • 5 garlic cloves, minced
  • 1 T minced ginger root
  • 1 lb. shrimp, peeled and deveined
  • 2 T avocado oil

Instructions
  1. In a large skillet on medium heat, add the avocado oil and onion. Sauté until the onion is translucent, stirring occasionally.
  2. Add the garlic and ginger and continue cooking until the mixture is fragrant, about 1-2 minutes.
  3. Add the shrimp and carrots and cook for 5-7 minutes.
  4. Add the coconut aminos, fish sauce, sesame oil, and cauliflower rice. Stir everything together and continue cooking for 6-7 minutes, stirring occasionally. Most of the liquid should have evaporated.
  5. Add in the green onions and pineapple. Continue cooking the shrimp and cauliflower rice mixture for a few more minutes, just until the pineapple is warm.
  6. Serve in bowls and enjoy!
