Roasted Cauliflower & Sweet Potato

It has been a little while since I posted a delicious vegetable recipe. This one is super easy and full of flavor. The sweet potatoes and cauliflower are tossed with spices, garlic, onion, ginger, and lime juice to create a side dish you could eat with every meal. A few times after I made this, I ate it for breakfast with some crispy prosciutto and a couple of runny eggs, it was amazing.

Roasted Cauliflower & Sweet Potato

This side dish is flavorful and delicious. It will pair perfectly with any main dish and is Whole30 and Paleo compatible.

Ingredients
  • 1 head of cauliflower, cut into small florets
  • 2 small sweet potatoes, small dice
  • 1 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1 small yellow onion, large dice
  • 5 garlic cloves, minced
  • 1 1/2 T ginger root, minced
  • 1/2 lime, juiced
  • 1 1/2 tsp sea salt
  • 3 T ghee, melted

Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl toss the cauliflower and sweet potatoes with cumin, turmeric, onion, garlic, ginger, lime juice, sea salt, and ghee.
  3. Spread the cauliflower and sweet potatoes in a single layer on the sheet pan. Place in the oven and bake for 45-50 minutes. The cauliflower should be slightly charred, and the sweet potatoes should be soft when it’s done.
  4. Enjoy right away or store leftovers in the refrigerator and use them for any meal.
