Roasted Citrus Carrots

Making tasty veggies is something I love to do. I usually get stuck eating the same vegetables on repeat. To keep this from happening, I have to come up with new vegetable recipes for the blog. These citrus roasted carrots are easy and so flavorful. The carrots are roasted, and a citrus glaze is made on the stovetop by reducing orange juice with spices.

Roasted Citrus Carrots

These carrots are tossed in a cinnamon citrus glaze after being roasted. They are Whole30 and Paleo compatible.

Ingredients
  • 24oz carrots, quartered and cut into 2-inch-long pieces
  • 1 1/2 C orange juice
  • 1/2 tsp cumin
  • 1/2 tsp cinnamon
  • 1 tsp orange zest
  • 1 T avocado oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions
  1. Preheat the oven to 450 degrees and line a sheet pan with parchment paper. Toss the carrots with avocado oil, sea salt, and pepper. Spread the carrots in a single layer on the sheet pan and place them in the oven to roast for 15-20 minutes.
  2. In a small saucepan add the orange juice, cumin, cinnamon, and orange zest. Place it on medium heat and bring to a boil. Reduce the mixture for about 20 minutes or until 1/4 cup remains.
  3. Toss the roasted carrots in the reduced orange glaze and serve. Enjoy!
