Roasted Strawberry & Basil Crostini with Goat Cheese

This recipe is a little different than the normal recipes I create and share. This is something I created for a wine tasting and have used multiple times for other parties. People always love it, so I thought I would bring it here and share it. I used a gluten-free baguette to make the crostini, but feel free to use a normal baguette if you tolerate gluten.

Roasted Strawberry & Basil Crostini with Goat Cheese

Crostinis are smeared with goat cheese and topped with roasted strawberries and basil. These are easy and delicious and definitely a crowd-pleaser.

Ingredients
  • 2 T honey
  • 1/4 C water
  • 10 large basil leaves
  • 1 lb. strawberries, quartered
  • 1 gluten-free baguette, cut into 1/4 inch slices
  • 2-3 T ghee, melted
  • 4oz goat cheese

Instructions
  1. Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
  2. Dredge the slices of bread in the melted ghee and lay them flat on the sheet pan. Place in the oven and bake for 8-10 minutes. The crostini should be golden brown but not burnt.
  3. Reduce the oven temperature to 300 degrees. In a small saucepan, add the honey, water, and 5 basil leaves-torn into small pieces. Bring the mixture to a boil and remove it from the heat.
  4. Toss the quartered strawberries in the honey mixture and pour them onto a parchment-lined sheet pan. Place in the oven and roast for 50 minutes.
  5. Spread the goat cheese on the crostini and top with the roasted strawberries. Cut the 5 remaining basil leaves into thin slices (chiffonade). Sprinkle the basil over the crostini and serve.
