Sausage & Bacon Hash

Hash recipes are so versatile. There are so many different combinations and you can add any of your favorite veggies. They come together quickly and make a great dish for any meal- breakfast, lunch, or dinner. It’s a great one-pan dish that will include everything you need from a meal. This recipe is packed with vegetables. Feel free to substitute any of the vegetables for what you have on hand.

Sausage & Bacon Hash

This is an easy, flavorful hash that is Whole30 and Paleo compatible.

Ingredients
  • 1 lb. sausage of choice, I used breakfast sausage
  • 10oz bacon, roughly chopped
  • 1 large sweet potato, small dice
  • 1 medium yellow onion, medium dice
  • 5 garlic cloves, minced
  • 2 C asparagus, cut into 1-inch pieces
  • 3 C spinach
  • 1 medium zucchini, cut in half, and then cut into 1/4 inch thick pieces
  • 1/2 C water
  • 1 tsp sea salt
  • 1/2 lemon, juiced

Instructions
  1. In a large skillet pan on medium heat add the bacon and cook until it’s crispy, stirring occasionally to keep the pieces from burning. Once the bacon is crispy, remove it from the pan and set it aside. Drain any excess fat from the pan.
  2. Add the sausage and chop it up into small pieces.
  3. Add the onion, garlic, and sweet potato. Continue cooking for about 7-10 minutes.
  4. Add the asparagus, spinach, zucchini, lemon juice, salt, and water. Scrape any brown bits from the bottom of the pan and cook an additional 5-7 minutes, the vegetables should be fully cooked.
  5. Add the bacon back to the pan and stir everything together. Serve and enjoy!
