Sirloin Steak & Vegetables

The key to cooking the sirloin steak in this recipe is to slice it super thin, against the grain. If you cut larger pieces, the meat will be tough and hard to chew. Slicing it thin and not overcooking it, will keep it tender. I used the salt-free Herbed Paleo Powder seasoning blend, but feel free to swap that out for any steak seasoning you love.

Sirloin Steak & Vegetables

This is an easy, one-pan meal that uses thinly sliced steak, vegetables, and steak seasoning. It's Whole30 and Paleo compatible.

Ingredients
  • 1 lb. sirloin steak, thinly sliced against the grain*
  • 1 small yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 large zucchini, cut in half, and then sliced in 1/4-inch-thick pieces
  • 8oz mushrooms, sliced
  • 3oz shiitake mushrooms, stems removed and sliced
  • 4 T avocado oil
  • 2 tsp salt-free Herbed Paleo Powder
  • 2 tsp sea salt (omit if using a seasoning blend that contains salt)

Instructions
  1. In a large skillet pan on medium heat, add 2 tablespoons of avocado oil. Once the pan is hot add the steak, 1 teaspoon salt, and 1 teaspoon Paleo Powder or seasoning of choice. Sauté for about 2-4 minutes and remove the beef from the pan and set aside.
  2. Add 2 tablespoons avocado oil to the pan along with the mushrooms, onion, garlic, zucchini, 1 teaspoon sea salt, and 1 teaspoon Paleo Powder. Continue cooking for 7-10 minutes, stirring occasionally. Vegetables should be cooked through.
  3. Add the beef to the pan with the vegetables and lightly stir everything together. Continue cooking for a few more minutes, just until the beef is hot.
  4. Remove from the heat and enjoy!

*You want to slice the steak as thin as you can, you do not want think slices of meat.
