Spicy Garlic Shrimp

Growing up, we ate seafood often; this was one way we enjoyed shrimp. It's easy to make and comes together quickly, but it is delicious and a crowd-pleaser. This is a great appetizer to serve when friends come over, before the main meal when most of the meal is being prepared, and people are hanging out and chatting. Food, to me, is usually the center of some of my best memories. Nothing is better than delicious food and the company of friends and family.

Spicy Garlic Shrimp

This is an easy, delicious appetizer that is paleo and gluten-free.

Ingredients
  • 1 lb shrimp, peeled and deveined
  • 1/4 C garlic cloves, thinly sliced
  • 3/4 C extra virgin olive oil
  • 1/2 tsp crushed red pepper
  • 1 1/2 tsp sea salt
  • 1/3 C fresh parsley, minced
  • 3 T lemon juice
  • 2 T dry white wine
  • gluten free rolls or any bread for service
Instructions
  1. In a large saute pan on low heat, add the olive oil and thinly sliced garlic. Continue cooking until the garlic begins to brown and is fragrant about 5-8 minutes.
  2. Add the crushed red pepper, lemon juice, white wine, sea salt, and shrimp to the pan. Cook until the shrimp are no longer opaque and have a white and pink color, about 5 minutes.
  3. Add the parsley and cook an additional 2-3 minutes.
  4. Serve the shrimp and olive oil skillet with warm, crusty rolls or bread.
