Spicy Pork & Asparagus

This is such an easy meal that is ready to go in under 30 minutes. The flavors are bright and compliment the pork and asparagus perfectly. You can substitute the ground pork for ground turkey or chicken if you would prefer. After making this dish, I ate it for the next three meals. This one-pan dish is perfect for a hectic evening and tastes even better the next day.

Spicy Pork & Asparagus

Ingredients
  • 1 lb. ground pork
  • 1 1/2 T avocado oil
  • 5 garlic cloves, minced
  • 1 T minced ginger root
  • 1 bunch asparagus, ends trimmed off, and stalks cut into 2-inch pieces
  • 1/4 C + 1 T coconut aminos
  • 1 tsp crushed red pepper
  • 1 tsp sesame oil
  • 1 tsp fish sauce
  • 2 tsp rice vinegar

Instructions
  1. In a large skillet on medium-low heat, add avocado oil, garlic, and ginger. Sauté for about 1 minute, occasionally stirring to keep the mixture from burning.
  2. Add the ground pork and chop it into small pieces. Continue cooking until the pork is fully cooked and no pink remains. If you have a large amount of excess fat in the pan, drain the fat.
  3. Add the asparagus pieces, coconut aminos, crushed red pepper, sesame oil, fish sauce, and rice vinegar. Stir together and cook until the asparagus is soft about 5-7 minutes.
  4. Serve and enjoy!
