Sunbutter Flourless Chocolate Chip Cookies

If you're looking for an easy cookie that is allergy friendly, I've got you covered with this recipe. You only need 6 ingredients, and about 20 minutes from start to finish to enjoy a delicious treat. The cookies should still look a little gooey when they are finished baking. Then leave them alone until they cool. If you notice a green tint to the cookies, that is absolutely normal. There is a chemical reaction that occurs between the chlorophyll in the sunflower seeds and baking soda that may turn the cookies green.

These cookies have minimal ingredients and are delicious. They are paleo, nut-free, and gluten-free.

Ingredients
  • 1 C sunflower seed butter
  • 2/3 C coconut sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 C Enjoy Life Chocolate Chips
Instructions
  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, or in the bowl of the stand mixer add the sunflower seed butter, coconut sugar, egg, vanilla extract, and baking soda. Using a hand mixer or stand mixer, cream the mixture until it's fully combined.
  3. Stir in the chocolate chips.
  4. Using a spring loaded cookie scoop, form two balls and then roll them together with your hands to form a large dough ball. Place the dough ball on the sheet pan and continue the process until all the dough is used.
  5. Place the sheet pan in the oven and bake for 8-10 minutes. The cookies should still appear gooey when they are done. Do not overbake or the cookies will be dry.
  6. Remove from the oven and leave the cookies on the sheet pan to fully cool before eating.
