Air Fryer Carrots

Vegetables cooked in the air fryer are one of my favorite things. I feel like they always taste better coming out of that appliance and I like my veggies to be a little toasted. This recipe keeps the ingredient list minimal, while still making a side dish that has lots of flavor.

Air Fryer Carrots

This is a great vegetable side dish that comes together quickly and easily. It's Whole30 and Paleo compatible and only requires five ingredients.

Ingredients
  • 7 large carrots, peeled and sliced into 1/4-inch thick coins
  • 3 garlic cloves, minced
  • 1 T ghee, melted
  • 1 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground ginger
Instructions
  1. In a medium bowl toss all the ingredients together until fully combined.
  2. Place the seasoned carrots in the basket of the air fryer and cook at 400 degrees for 15-20 minutes.
  3. Shake the basket or stir the carrot coins every 7 minutes to ensure even cooking.
  4. The carrots should be tender and slightly browned when they are done.
