Air Fryer Smashed Potatoes with Tarragon Special Sauce

You must make these smashed potatoes if you’re looking for a delicious side or appetizer. Depending on the size of the air fryer you have, you made need to make them in batches. These would be great for grilling season or as a side to burgers.

Air Fryer Smashed Potatoes with Tarragon Special Sauce

This is a fun side dish or appetizer that would go great with any meal. It's paleo and Whole30-friendly.

Ingredients

Smashed Potatoes

  • 1 lb baby potato medley
  • 1 T sea salt plus more for seasoning
  • avocado oil

Tarragon Special Sauce

  • 2 T ketchup (check labels if you’re on a round of Whole30)
  • 1/2 C paleo mayonnaise
  • 1 tsp red wine vinegar
  • 1 T minced red onion
  • 1 tsp parsley
  • 2 tsp fresh tarragon, minced
  • 2 tsp coconut aminos
Instructions
  1. Bring a pot of water and 1 tablespoon of sea salt to a boil. Add the potatoes and cook until they are fork-tender about 20-25 minutes. Drain the potatoes and let them dry off.
  2. Place the potatoes on parchment paper and smash them with a jar or glass.
  3. Place the smashed potatoes in a single layer of an air fryer. Drizzle with avocado oil and sprinkle with sea salt. Air fry at 400 degrees for 10 minutes.
  4. While the potatoes cook, make the tarragon special sauce by whisking the ketchup, mayonnaise, red wine vinegar, red onion, parsley, tarragon, and coconut aminos in a small bowl until thoroughly combined.
  5. Serve the smashed potatoes with the tarragon special sauce.
