Maple Glazed Olive Oil Pumpkin Loaf

There’s just something about pumpkin season that calls for a cozy slice of something warm and sweet. This gluten-free maple glazed olive oil pumpkin loaf has quickly become one of my favorite ways to welcome fall. The olive oil keeps it incredibly moist with a subtle richness, while the pumpkin and spices bring all the comforting flavors we crave this time of year. And because I couldn’t resist, I topped it with a silky maple glaze that soaks into the loaf just enough to make every bite feel extra special. It’s easy to make, gluten-free, and just the kind of treat you’ll want to enjoy a crisp autumn day.

Make sure the parchment paper doesn't hang too far over the edge of the loaf pan, or it will burn in the oven.

Ingredients

Maple Glaze

  • 1/2 C organic powdered sugar
  • 3 T maple syrup
  • 1/2 tsp vanilla extract
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a medium bowl, whisk the flour, baking soda, baking powder, pumpkin pie spice, sea salt, and coconut sugar. Set aside.
  3. In a small bowl, whisk pumpkin puree, extra virgin olive oil, eggs, and 2 teaspoons vanilla extract.
  4. Add the wet ingredients to the dry ingredients and whisk until everything is thoroughly mixed.
  5. Line a 8.5 x 4.5 inch loaf pan with parchment paper, covering the bottom and extending over the long sides.
  6. Pour the batter into the pan and place it in the oven for 45-50 minutes. A toothpick should come out clean when the loaf is fully cooked.
  7. To make the glaze, in a small bowl, whisk the powdered sugar, maple syrup, and ½ teaspoon vanilla extract.
  8. After the loaf is removed from the oven, remove it from the pan and place it on a cooling rack.
  9. Once it’s fully cooled, pour the maple glaze over the top, slice, and enjoy!
