Almond Butter & Chocolate Chip Collagen Balls

These balls of nut butter goodness make a great snack to keep on hand. Store them in the refrigerator and pull one out when you get hungry. They are sweetened with dates, contain healthy fats, and collagen. For the chocolate chips I used Hu chocolate gems, but feel free to use any dairy-free chocolate chips you like. I also used Vital Proteins collagen peptides. Make sure you are using unflavored collagen and not gelatin. The gelatin will not work. These will be in snack rotation at my house for sure.

Almond Butter & Chocolate Chip Collagen Balls

These collagen balls make the perfect snack to keep in the refrigerator when you need a little something. They are Paleo and gluten-free.

Ingredients
  • 8 dates, pitted
  • 3/4 C almond butter (no salt, only ingredient almonds)
  • 2 scoops unflavored collagen peptides
  • 2 tsp vanilla extract
  • 1 T chia seeds
  • 1 tsp sea salt
  • 1/4 C chocolate chips
  • 2 T coconut oil

Instructions
  1. In a food processor, add the dates and mix until the dates are chopped up and begin to form a large ball.
  2. Add the almond butter, collagen peptides, vanilla, chia seeds, sea salt, and coconut oil. Puree until everything is combined thoroughly and a smooth thick batter has formed.
  3. Scrape the batter into a medium-size bowl and fold the chocolate chips in. Use a spring-loaded cookie scoop to form balls of the batter. Roll them in your hands to make smooth.
  4. Enjoy right away and store any extra in the refrigerator.
