Beef Lettuce Wraps

These lettuce wraps are easy and flavorful. They come together quickly and will make even the pickiest eater happy. With the lettuce wraps, you’ll make an apricot dipping sauce. You can get this meal made and on the table in under 30 minutes. Perfect for a busy weeknight meal.

Beef Lettuce Wraps

Flavorful beef is served in a lettuce wrap and served with an apricot dipping sauce. This recipe is Whole30 and Paleo compatible.

Ingredients
  • 1 lb. ground beef
  • 2 T minced ginger root
  • 6 garlic cloves, minced
  • 1/4 C + 2 T coconut aminos
  • 1/4 C orange juice
  • 1 C shredded carrots
  • 2 green onions, thinly sliced
  • living lettuce- for the wraps
  • 1/2 C apricot jam (check labels if you’re on a round of Whole30)
  • 2 T rice vinegar

Instructions
  1. In a large sauté pan on medium heat, add the ground beef and chop it into small pieces. Add 4 minced garlic cloves and 1 tablespoon of minced ginger and continue cooking until the beef is fully cooked and no longer pink. If your beef is high in fat, drain the excess fat from the pan.
  2. Add 1/4 cup of coconut aminos, orange juice, carrots, and green onion. Continue cooking, stirring occasionally, until most of the liquid has evaporated. Remove from the heat.
  3. In a small saucepan on medium heat, combine add the apricot jam, rice vinegar, 2 tablespoons of coconut aminos, 2 minced garlic cloves, and 1 tablespoon of minced ginger. Whisk the ingredients together and bring the sauce to a simmer and then remove it from the heat.
  4. Place a large scoop of the beef mixture into each piece of the living lettuce and serve with the apricot dipping sauce.
