Frozen Blended Coffee

I love coffee, but it causes inflammation in my body, so I don’t have it very often. As the temperatures are warming up outside, I will occasionally enjoy a tasty iced coffee as a treat. I wanted to make a better-blended coffee than the sugar-filled versions you will find at most coffee places. This recipe came out perfect. I’m going to have to refrain from making one every day, but it will be so tempting. I recommend using a strong cold brew to make this blended coffee so the coffee flavor isn’t overpowered. I used almond milk and almond butter in this, but any nut milk and nut butter will work.

This easy and delicious coffee drink is Paleo and dairy-free. It's perfect for anytime you are craving a tasty coffee drink.

Ingredients
  • 3/4 C strong cold brew coffee
  • 1/4 C unsweetened almond milk
  • 2 T maple syrup
  • 1/4 tsp cinnamon
  • 1 T almond butter
  • 1 scoop collagen peptides
  • 1/2 tsp vanilla extract
  • 1 C ice cubes

Instructions
  1. In a high-speed blender, combine all of the ingredients.
  2. Blend on high until the mixture is smooth and the coffee has a creamy texture, about 1 minute.
  3. Enjoy!
