I like to add them to any pan of roasted veggies because they add a different flavor profile. For this recipe, you simmer them in coconut milk and puree them. They create a velvety smooth puree with a nutty flavor.
Using parsnips for a puree base is a fun way to switch up a mashed potato side. Parsnips are creamy, flavorful, and so delicious. This side dish is Whole30 and Paleo compatible.
