Seasoned Breakfast Potatoes with Bell Peppers & Onions

My husband is a meat and potato kind of guy. His normal diet consists of fast food, gummy bears, cookies, and beer. He spent the last year in Turkey, and without me there to force him to eat something nutritious occasionally, he didn’t. He’s currently on a round of Whole30, so I created these potatoes for him as a side dish. I used Yukon gold potatoes because they tend to hold up better against heat and not turn to mush. I also used Primal Palate’s Breakfast Blend seasoning, which gives the potatoes a yellow color.

Seasoned Breakfast Potatoes with Bell Peppers & Onions

This is an easy breakfast side dish perfect for brunch, the weekend, and meal prep. They are Paleo and Whole30 compatible.

Ingredients
  • 2 bell peppers, large dice
  • 1 medium yellow onion, large dice
  • 2 lbs. Yukon gold potatoes, 1-inch dice
  • 1/4 C + 1 T ghee
  • 1 1/2 T Primal Palate Breakfast Blend seasoning
  • 5 garlic cloves, minced
  • 3 tsp sea salt

Instructions
  1. In a large sauté pan on medium heat, add the ghee. Once it’s melted, add the potatoes stir to coat them in the ghee.
  2. Continue cooking for about 10 minutes, stirring often to keep the potatoes from sticking to the bottom of the pan. The potatoes should be starting to soften.
  3. Add the onion, garlic, bell peppers, sea salt, and breakfast blend seasoning. Stir everything together and continue cooking for an additional 12-15 minutes. Potatoes, peppers, and onions should all be cooked.
  4. Serve with breakfast.
