Watermelon Icee

I am not a watermelon fan and usually pass on it or anything watermelon flavored. I initially bought the watermelon for our saint bernard, Macaron, but he had no interest in it, and I didn't want it to go to waste. I set out to make a refreshing summer drink that everyone could enjoy, whether they loved watermelon or not, and it came out better than I could have hoped. The fresh mint adds a bright, fresh flavor, and the honey brings a little sweetness, but it isn't overly sweet. As I said before, I am not a watermelon fan, but I love this drink. It's refreshing for those hot summer days, and it can be made ahead of time and frozen until the day you want to enjoy them or serve them to guests.

This drink is delicious and refreshing, perfect for a hot summer day. It's Paleo and AIP friendly.

Ingredients
  • 4 C watermelon chunks
  • 3 T lime juice
  • 2 tsp fresh mint, minced
  • 3 T honey
  • 3 C ice cubes
Instructions
  1. Place the watermelon chunks, lime juice, mint, and honey into a high-speed blender and puree until no chunks remain.
  2. Add the ice to the blender and puree for 5-10 seconds. Do not over blend, or the drink will not have an icee consistency.
  3. Divide into four glasses and serve immediately.

*You can make this ahead of time and place it in the freezer. Pull the icee mixture out of the freezer 30 minutes before serving to let it thaw a bit. Place the watermelon mixture in the blender and blend again.
