Blueberry Lemon Chia Seed Pudding

Chia seed pudding is very versatile. You can change up the flavors completely just by adding a few different ingredients. This version is tart like a lemon meringue pie and it’s sweetened just slightly with a little honey. This version would be perfect for a summer picnic or even the 4th of July. You could add strawberries and have a red, white, and blue dessert. This one is definitely a favorite in our house.

Blueberry Lemon Chia Seed Pudding

These little jars of chia seed pudding make the perfect summer treat. They are sweet, slightly tart, and so delicious. Being Paleo and dairy-free is the bonus.

Ingredients
  • 3 C full fat coconut milk
  • 1/4 C honey
  • 1 tsp vanilla extract
  • zest of 1 lemon
  • 2 lemons, juiced
  • 1 C chia seeds
  • 1/4 tsp sea salt
  • blueberries

Instructions
  1. In a medium bowl whisk together the coconut milk, honey, lemon zest, lemon juice, chia seeds, vanilla, and sea salt.
  2. Once everything is fully combined, ladle the mixture into jars and cover with either lids or plastic wrap. Place in the refrigerator overnight.
  3. Before serving, top the chia pudding with blueberries and enjoy.
