Iced Blueberry Matcha Latte

Matcha lattes are my go-to drink these days. I love the flavor and all the health benefits that it provides. As the weather is heating up, I wanted to make an iced version that was fun. This drink came out beautiful and delicious. The recipe below is for 1 serving, so I recommend making a double or triple batch of the blueberry puree so you can have this drink a few times throughout the week.

Iced Blueberry Matcha Latte

This matcha latte is dairy-free and Paleo. It's a little sweet from the blueberry puree but not overly sweet.

Ingredients
  • 1/2 C frozen blueberries
  • 1 T light-colored honey
  • 1 C unsweetened vanilla almond milk
  • 1 tsp Jade Leaf Barista Edition Matcha Powder
  • 1/4 C + 1 tsp water
  • 1 C ice

Instructions
  1. In a small saucepan on medium-low heat, add the blueberries, honey, and 1 teaspoon water. Cook the mixture until the blueberries pop, about 5 minutes. Stir the mixture occasionally to keep it from burning.
  2. Use a blender or immersion blender to puree the blueberry mixture.
  3. In a small bowl, whisk the matcha powder and 1/4 cup water until it’s smooth and no lumps remain
  4. Place the blueberry puree in the bottom of a glass, followed by the ice cubes. Pour the milk over the ice and finish by adding the matcha/water mixture.
  5. Serve with a straw and enjoy!
